1.5 cups corn (can, frozen, or cob)
1 tsp baking powder
1 egg, beaten
1 tsp sriracha
Mix all ingredients, and cook like pancakes in a buttered pan. Serves well with tzatziki (yogurt dip). Makes 4 large fritters!
